Probably mainly because there aren't pension schemes in most islamic countries. So having offspring is your pension, as the more you have, the more likely you won't be left struggling in your latter days. It could ultimately lead to lots of immigration to other countries, lots of civil wars and maybe jihads against non-muslim countries, though, as hungry people can get very angry. If a population expands exponentially the food does run out eventually.
